    Been slacking on ordering a new oven since the weather has been hot.
    I have a ton of chia seeds I need to eat up. Plus, I have this "extra rich" soy milk that needs to be finished off. How fortunate.

    1 tbsp / 15ml (10g) chia seeds
    ¾ cup / 188ml soymilk
    3 tbsp / 45 ml fresh lemon juice
    1 tsp / 5 ml vanilla
    ⅓ cup / 80ml (75g) coconut oil, soft (at room temperature)
    ⅔ cups / 160ml (145g) granulated sugar
    1 ⅓ cups / 330ml (180g) unbleached all-purpose flour
    1 ½ tsp / 7.5ml baking powder
    ¼ tsp / 2.5 ml baking soda
    ¼ tsp / 1.25ml salt
    1 tbsp / 15ml (11g) poppy seeds
    2 tbsp / 30ml (16g) lemon zest

    I am looking in to the Brava oven. I want to get rid of my stove. I don't like it. I want a gas cooktop in an island type thing, and a stove on top of counter. I'm not a family, I don't bake 18 pound turkeys. I don't need an oven. When I move, I'll replace it. Of course, this requires A: Getting a Brava, B: Having the $ to spend to move around the kitchen. Probably $7600 all in and I know this stuff. So, it's a dream right now. But the Brava I may be able to get for use on camera, so, will try.I am looking in to the Brava oven.     I'm jealous you have so much space to play with! This is an image of a kitchen similar to mine only I don't have the gas range. I put a dish drying rack there. My little oven/microwave hybrid is on top of my refrigerator that squeezes in next to the sink.Got to be careful opening the door! I couldn't fit a regular 13 inch pie dish a friend from America gave me into my old oven. Nice glass dish, good for baking anything.
    I haven't seen the Brava over here, probably wouldn't sell well since it's just an oven, but it's roughly the same size as the nicer oven/microwave hybrid I'm looking at. I do like having a microwave, they're good for sterilizing dishes and boiling a single cup of water just for myself.
    Once I get my oven situation settled, I will try this chia seed cake. If its possible to reduce the coconutty flavor, maybe I'll try an earl grey "milk" tea version as well.

    Cooking vegan stuff actually appeals to my inner laziness in a way.
    I hate doing the dishes but getting butter or meat grease off dishes is way more work and a hojillion times more disgusting.
    Although coconut fat that floats to the top of the can of coconut milk I buy comes a little close. Yeek.

    Anti abortion advising is running rampant in the USA through Crisis Pregnancy Centers. These centers are run by the religious nutbags and they are telling women that they have babies(not embryos) inside them and they are duping women.
    These centers give women ultra sounds and talk about the little wad of cells as though it is a living breathing baby.

    Without mom, it is a pile of cells.

    The maternal mortality is rising in the USA. IE, complications and deaths from giving births in the USA with its allegedly awesome medical care, is going up while it goes down in Europe and Japan.

    Women also know the truth about raising kids and the state of support.
    If you're pre-born, you're OK.
    If you're pre-school, you're fucked.

    That, of course, is not my wish. My wish is that we don’t sugar coat things and accept it all for what it is. Abortion is destroying a human embryo, most times, a viable one. And? Don’t call it fancy names, like zygote, it’s a human embryo. But the carrier of that embryo has EVERY RIGHT to say what happens to her, and it. EVERY RIGHT and those should never be taken away. Why can’t we speak the truth, face it, accept our choices, and move on? Like meat. We kill animals after raising them in horrifying conditions to then eat their unhealthy flesh cooked in ways that are killing us. That is the US food industry. Just call it what it is. And if you’re ok with it, OK. I’m OK with the carrier of the embryo deciding whether they want to carry it or not.That, of course, is not my wish.     True, it is the destruction of a human embryo. Those are potential lives seeing as to how the human body can still destroy it all by itself. No one calls someone who has a miscarriage a murderer.

    Oh, hitting return without holding shift will post instead of line break. Controlling one's reproduction is a might complex thing that goes way beyond birth.
    I really am blessed to be in a country where abortion is a total non-issue.

    All convenience stores in Japan carry a vegan super sushi called Natto Maki. IE, Natto rolls. I'm on antibiotics for the worst sinus infection ever so I eat natto maki for my health. Put a ton of wasabi and that terrible natto taste is gone. Japan is a country you can be a lazy vegan in.

    This will be my delicious demise:
    3 15 oz cans of full fat coconut milk, room temperature, divided
    1 1/2 cup maple syrup
    2 tsp vanilla extract
    2 tsp nutmeg
    2 tsp cinnamon
    1 tsp cloves
    1 cup white rum
    2-3 tsp coconut extract
    1 chia egg (1 tbsp chia seeds, 3 tbsp water mixed together)
    handful of coconut flakes (optional)
    cinnamon sticks (optional)

    Making Condensed Coconut Milk

    In a medium to large sauce pan bring 2 cans coconut milk and maple syrup to a boil. Once boiling, reduce heat and simmer for 25 to 30 minutes, stirring constantly.
    Add in all the spices, vanilla extract, cinnamon, nutmeg, and cloves. Keep stirring, you will notice it reduce and will start to thicken. Keep in mind it will not be super duper thick, just thicker.
    After 30 minutes, remove from heat, place in a jar, and store it in the fridge to let it completely cool.
    Putting it all together - The Coquito

    When your condensed milk is cool place in a blender and add an additional can of coconut milk, the chia egg (1 tbsp chia seeds, 3 tbsp water), followed by coconut extract, another tsp of vanilla extract, and the rum. Blend until the chia seeds are all ground up and it's creamy.
    Taste it as you go and add more spices as needed. By this point usually I add a pinch of everything, nutmeg, cinnamon and Cloves. I more so add cinnamon the most. Cloves can dominate the flavor if too much is added so go easy with that. You can add shredded coconut or coconut flakes too.
    Place your coquito in an air tight container like a glass jar and store it in the fridge.
    Cinnamon sticks are good to add more flavor and to stir while drinking.
    Shake well before serving.
    It is best served cold, in a rocks glass over ice. Enjoy!

    Chill time is not included in the prep time. Chill times vary. Be sure the condensed milk is cold when moving to the next step, this insures it's consistency in thickness.
    You can sub the additional can of coconut milk with vanilla almond milk.
