Hummus is easy, delicious and can be dressed up in so many ways. Here’s the basic recipe and the rest is up to you imagination! I use a Cuisinart Pressure cooker for the beans, but you can use an InstaPot or canned beans (save the aquafaba they come in).
First Prepare the Garbanzos:
1 cup soaked or raw garbanzo beans
2 tablespoons Safflower Oil
Add one cup raw beans, soaked or unsoaked to pressure cooker. Put at least four cups of water in the pressure cooker and the oil. Cover and cook on high 44 minutes for unsoaked beans, 35 minutes for soaked. Natural pressure release for 20 minutes then open valve. Beans are done.
Now, the Hummus:
2 1/2 cups cooked garbanzo beans
1 tablespoon fresh parsley
4 cloves of garlic
1/4 cup Tahini (which is sesame butter/paste)
1 teaspoon salt
2 tablespoons lemon juice
1/4 cup Safflower Oil (or Olive)
Water for processing
1 tablespoon Smoked Paprika
1/4 cup Pine Nuts
! tablespoon Hazelnut or other oil for garnish
Put ingredients in Breville Sous Chef food processor or equivalent. Process until smooth and creamy. Put in bowl, depress center. Cover in paprika, sprinkle with pine nuts and place oil in center. Serve!
